Father’s Day Weekend and Weekly Menu

Happy Father’s Day!  Any chance to tell your parent how much you love them is a blessing but this year is extra special because it is Mort’s first Father’s Day!  I seriously can’t think of any better way to spend a Sunday than to celebrate my two favorite people.  Having Eva has given us these fun new holidays and opportunities to say I love you in the greatest ways.

I have been waiting for today all week and have been bursting at the seams to give Mort his Father’s Day present that Eva and I crafted together.  Us girls got up early and let him get some extra shut eye and had everything out for when he got up so he could open his present right away (I wasn’t excited or anything 🙂 ).  Eva and I made him a cute fire truck out of her footprint and then framed it so he could bring it to work.  It came out so cute and he absolutely loved it!

So the present was a hit but then I wanted a picture of the two of them, which is easier said than done.  Getting Eva to smile at the camera requires me to hold the camera away from my face and talk to her which 9 times out of 10 causes the people to be way off center in the picture.  Normally it’s ok because I just take so many that I usually get one good one but these ones are just too cute to not share even though they aren’t centered

She was excited for Father’s Day too.  Now for one that includes the Dada a bit better

Even though it’s Father’s Day we have been hard at work turning a room downstairs that turned into a junk room back into an office.  We are so close to being done so pics to come soon!

Now for our weekly menu.  Our schedules are crazy yet again this week so we didn’t need as many meals.  Mort had a choice of anything he wanted for dinner tonight and all he really wanted burgers so we had some yummy burgers with crispy crowns and veggies.  For the rest of the week we are going to have:

It’s supposed to be really hot later this week so I thought a slow cooker meal and tacos wouldn’t use the oven and would be yummy fast options.  The BBQ Beef recipe is new to me so I’ll have to let you all know how it goes.  One of my favorite meals is the Pesto Past with Tofu recipe, and yes, even my husband will eat the tofu.  It used to be a quick and easy meal but now it takes a little more prep because I have to make the pesto from scratch since all the prepared pesto options in the grocery store have parmesan cheese in it.  The recipe I use is delicious though and you can’t even tell it’s dairy free.
