Father’s Day Weekend and Weekly Menu

Happy Father’s Day!  Any chance to tell your parent how much you love them is a blessing but this year is extra special because it is Mort’s first Father’s Day!  I seriously can’t think of any better way to spend a Sunday than to celebrate my two favorite people.  Having Eva has given us these fun new holidays and opportunities to say I love you in the greatest ways.

I have been waiting for today all week and have been bursting at the seams to give Mort his Father’s Day present that Eva and I crafted together.  Us girls got up early and let him get some extra shut eye and had everything out for when he got up so he could open his present right away (I wasn’t excited or anything 🙂 ).  Eva and I made him a cute fire truck out of her footprint and then framed it so he could bring it to work.  It came out so cute and he absolutely loved it!

So the present was a hit but then I wanted a picture of the two of them, which is easier said than done.  Getting Eva to smile at the camera requires me to hold the camera away from my face and talk to her which 9 times out of 10 causes the people to be way off center in the picture.  Normally it’s ok because I just take so many that I usually get one good one but these ones are just too cute to not share even though they aren’t centered

She was excited for Father’s Day too.  Now for one that includes the Dada a bit better

Even though it’s Father’s Day we have been hard at work turning a room downstairs that turned into a junk room back into an office.  We are so close to being done so pics to come soon!

Now for our weekly menu.  Our schedules are crazy yet again this week so we didn’t need as many meals.  Mort had a choice of anything he wanted for dinner tonight and all he really wanted burgers so we had some yummy burgers with crispy crowns and veggies.  For the rest of the week we are going to have:

It’s supposed to be really hot later this week so I thought a slow cooker meal and tacos wouldn’t use the oven and would be yummy fast options.  The BBQ Beef recipe is new to me so I’ll have to let you all know how it goes.  One of my favorite meals is the Pesto Past with Tofu recipe, and yes, even my husband will eat the tofu.  It used to be a quick and easy meal but now it takes a little more prep because I have to make the pesto from scratch since all the prepared pesto options in the grocery store have parmesan cheese in it.  The recipe I use is delicious though and you can’t even tell it’s dairy free.

Dinner and a little Product Love

For the past few days I have been eating take out or a frozen Amy’s meal for dinner since going to the trouble to cook for 1 person seems silly to me, so I was super excited to actually cook dinner when Mort finally came home from yet another business trip.  I’m all for meals that have few ingredients, don’t require a lot of prep, and have a lot of flavor.  One of my recent favorites is a recipe I found online called Drunken Pork Chops.  It only requires a few ingredients that I always have on hand mixed all together and poured over some pork and left to simmer.  It makes a really yummy sauce that looks like brown gravy but really tastes almost like a sweet bbq sauce, so good and such a great use of one of my Dad’s home brewed beers.  I choose to chop up some red skin potatoes to quickly mash because you don’t have to go to the trouble of peeling potatoes.  Throw it together with a veggie on the side and you have a really yummy week night meal!  The best part is you can just plop it on the stove and go do something else for a while.


Every so often there are things I come across that are fantastically wonderful.  They either are completely delicious, somehow make my life easier, do something cool, or fix something.  I love to get reviews from friends and other bloggers of things to try out because you seriously can never that a review on a website is 100% accurate.  One of my most recent favorite things I have discovered is So Delicious’ Dairy Free Chocolate Peanut Butter Swirl ice cream made from coconut milk.

The name seriously says it all.  I had given up all hope on having ice cream this summer until my wonderful husband saw this and convinced me to try it.  I had my doubts because I HATE coconut milk but I can’t tell the difference between this ice cream and another ice cream I have ever had.  It has been my go to treat for the last couple of months and I still can’t get enough!  I’m also so impressed by their website.  Since having a daughter with a food allergy I have become very aware of the companies that really get the fact that people have different dietary restrictions.  Right on their website they break down their products by different allergies so you can get a special treat no matter what you are looking for.  This is HUGE!  Visit their page to fill out a form to get a $1.00 coupon, you have to try it!
